The Wisdom of Soup: Why Chinese People Don’t Make Soup Just for Taste

In southern China, especially Guangdong, there’s a saying: “Better to have a meal without vegetables than without soup.”

Why is soup so important? Because soup is the most easily absorbed form of food.

You eat a piece of meat. Your stomach takes two or three hours to digest it. You drink a bowl of meat soup. The nutrients get absorbed quickly. For people with weak digestion — the elderly, the sick, children — soup is the gentlest and most effective form of nourishment.

TCM soup isn’t just throwing some meat and bones into a pot. Real “medicinal soup” has rules. You choose different ingredients based on the season, your body type, and how you’re feeling.

Example: spring “dampness-clearing soup.” Spring has lots of rain. Your body can build up dampness. Use barley, small red beans, and poria mushroom, add a little lean meat or pork bones, and make a soup. After drinking it, your body feels light, not heavy.

Summer “heat-relieving soup.” Mung beans, winter melon, lotus leaf, with some pork ribs. Cooling and refreshing. Stops you from feeling irritable from the heat.

Autumn “lung-moistening soup.” Autumn is dry. You may cough easily, your skin may feel dry. Use pear, snow fungus, apricot kernels, and lily bulbs. Make a slightly sweet soup or a savory soup. It moistens the lungs and helps your skin too.

Winter “warm-tonifying soup.” Winter is cold. You need to store heat. Use lamb, Chinese angelica root, ginger, and red dates. Make a rich, hearty soup. After drinking it, your whole body feels warm. No more cold hands and feet.

You might not be from Guangdong. You don’t have to make soup every day. But here’s a simple habit: make soup once a week. Buy some bones or chicken. Add a few simple ingredients. Simmer on low heat for an hour or two. Share it with your family.

Soup isn’t medicine. But it’s gentler than medicine. A warm bowl of soup warms not just your stomach — it warms your whole spirit.
